The classic one among the chillies
The Jalapeño chilli is one of most widely cultivated chilli varieties in the world.
The Jalapeño is variously named cuaresmeño, gordo and huachinango which together with the Poblano and Serrano chillies are widely used in Mexican dishes.
The fruits are harvested whilst still unripe, commonly consumed while still green, as they develop a fresh flavour and delicate heat in their green state.
The green Jalapeño chillies are thick-walled and are particularly suitable for salad, stuffing and pickling.
There are dozens of type of Jalapeño peppers, the varieties are various in colour stages, sizes and differ spiciness (Jumbo, Early, Purple, Tam...etc).
Generally, the fruits reach a length of between 4 - 7 cm and this pepper rates 2,500 and 10,000 unit on Scoville Scale.
They often are consumed fresh while still green, upripe completely, to limit the spiciness and enhance the aroma. Once ripened, the pods turn to dark green and red.
A typical variety Chipotles which is from Mexico, sun-dried and smoked with particular wood of mesquite trees has a characteristic smoky flavour.
